I'm in the middle of wrapping all the presents and enjoying a bottle of White Zinfandel when I remember that I still need to plan Christmas breakfast and go to the grocery store (at least the third time today I'd forgotten and remembered this detail). Wanting to make it as easy as possible, I searched out a breakfast casserole recipe that was also kid-friendly and came up with this one. Served along with muffins, fruit and hot chocolate with marshmallows, I think we have a winner:)
